Tomatoes are not super low in carbs, but all these salads are low-glycemic, gluten-free, and most are South Beach Diet friendly, and they're all amazing! There's no other food I look forward to quite as much as ripe summer tomatoes, and when good tomatoes are available, I can eat tomato salads or tomato sandwiches (with low-carb bread and with or without bacon) for days on end without getting tired of them. I first shared my picks for Ten Favorite Summer Tomato Salads with Garden Tomatoes clear back in 2011, when I'd just finished cleaning out my father's house with my siblings, and it was definitely tomato sandwiches (with bacon!) for comfort food that weekend. But normally there are lots more tomato salads than sandwiches at my house, that's why I have so many good tomato salads on this blog!
When I first picked my ten favorite tomato salads, I had a big vegetable garden where I loved to grow tomatoes. Now I finally have a nice garden space at the new house (thanks to my great brother Mark and his wife Lisa), and summer tomatoes are just starting to come at a steady pace in the 2017 garden. And for months I've had a note on my list of posts that need to be updated to update this collection of summer tomato salads to feature the newer ones that are now faves!
I actually had a brand new recipe I'd planned to post today. But then I realized that e-mail subscribers would be getting it on a day when they might be a little distracted, and I decided to save that for later in the week! So tomato salads are on the menu, and I hope you might find one or two here that will become big favorites at your house.
