I'm anxiously waiting to plant my new garden space again this year, but so far the nights are a ittle too cold in Utah. But when I do get it planted, I'm going to have four bush cucumber plants, so I should have plenty of cucumbers to make salads like this one. I found this easy, easy, easy but amazing cucumber salad years ago on a big recipe site that is no longer online, and I've been making the salad every summer since I first tried it in 2006!

and tomatoes. It seems like every summer I add at least one or two new recipes to my collection for these summer vegetables. So when I make a cucumber salad over and over you know it's really a winner, and when Kara and I made it recently to take these new photos we loved it. I'll be honest, it's partly the mayonnaise in the slightly sweet and sour tasting but creamy dressing that makes me like this salad so much, and I think it's a great change of pace from regular cucumber dressings!
I don't mind the slightly brown color from the balsamic vinegar, but you could use white balsamic vinegar if you have some. I sweetened the dressing with Monkfruit Sweetener, and used my fresh-frozen lemon juice. And, since cucumbers are one of The World's Healthiest Foods and everything here is super low in carbs (balsamic vinegar has some carbs, but the amount per serving is minimal), you can eat this as often as you'd like!
